HERO CHEESE: Lucky Marcel

It’s new, it’s award-winning, it’s delicate and dreamy... it’s our hero cheese for March!

We’re super excited to be championing Lucky Marcel from Feltham’s Farm in Somerset this month. A homage to two of Marcus and Penny’s favourite French styles, St Felicien and St Marcellin, this organic yeast-ripened cheese is super easy on the eye, with its delicate vermiculated rind drawing you in.

When young, the cheese is firm, lactic and fresh, but it ages quickly, breaking down to become softer and more liquid as each day passes, with the flavour profile intensifying along the way. As can be common with this style of cheese, wild blue moulds can sometimes appear on the rind. No need for alarm – these are totally harmless and add to the character of this special little cheese.

“It’s just a joy”, says Marcus. “You play around with different cheeses and sometimes it’s just like ‘bingo’. For a cheesemaker that’s so pleasing and delightful.”

We chatted to Marcus and Penny about their cheesemaking journey, their newest cheese, the importance of organic and much more. You can read the full feature in the March issue of Cheese Crowd.
